Goji (Lycium barbarum) leaves are wealthy in bioactive compounds however extremely prone to Aceria pallida, which induces gall formation. This examine aimed to characterize the metabolic and taste profile alterations in goji leaves following mite infestation. This examine used a complete method—non-targeted and focused metabolomics, unstable profiling, and antioxidant assays. Infestation by the goji gall mite triggered a robust protection response, rising the actions of superoxide dismutase and phenylalanine ammonia-lyase within the phenylpropanoid metabolic pathway by 2.31-fold and a pair of.67-fold, respectively, and enhancing the particular accumulation of whole polyphenols, whole flavonoids, key phenolic acids, and carotenoid metabolites. Concurrently, biotic stress enhanced the antioxidant exercise and altered taste traits in gall-induced goji leaves. These findings set up goji gall mite as a biotic stress elicitor that improves each antioxidant capability and sensory high quality. This examine offers a sustainable technique for valorizing gall-induced goji leaves as a high-value practical meals growth.
